Butternut Soup - Prepping for GAPS
Butternut Soup
2 tart apples diced
2 celery ribs minced
1 carrot diced
4C homemade chicken bone broth
bacon grease, coconut oil or ghee for sauteing
1 butternut squash - steamed until soft
full fat yogurt

While you're steaming your butternut, add the carrot and oil to a stockpot and saute 3-5min. Add celery and apple and saute until softened.
Add steamed butternut to the stockpot along with 4 cups of homemade chicken bone broth.
Cook until softened. Blend with stick blender until smooth.
Add coconut cream or yogurt until creamy to your liking. (We like a lot of creaminess so we added about 1/4 cup coconut cream and about 3 cups of yogurt to this batch of soup).
Salt and pepper to taste.
